Sole fish fillets baked with cherry tomatoes

You can replace the sole fillets with any fish you like, fresh or frozen, in this simple and yet delicious recipe!

You can replace the sole fillets with any fish you like, fresh or frozen, in this simple and yet delicious recipe!

Ingredients

4 sole fish fillets
1/2 kilo cherry tomatoes cut in quarters
1 large onion, sliced
2 cloves of garlic, whole, crushed in their skins
1 lemon cut into thin slices, with its peel
Two horn peppers, sliced
1 small bunch parsley, chopped
½ glass of white wine
1 bay leaf
¾ cup olive oil
Salt and pepper

Preparation method

Step 1

Preheat oven to 180ºC. In a wide pan, spread the cherry tomatoes and all the other vegetables. Season to taste.

Step 2

Season to taste the fish fillets and place them over vegetables.

Step 3

Spread the slices of lemon, add the bay leaf and pour the wine and olive oil over the rest of the ingedients.

Cover the pan with aluminum foil and bake for 20 minutes. Remove the foil and bake until brown.
