Juicy, caramelised apple upside-down cake

Perfect with a morning coffee

Retro rocks! This classic caramelized apple upside-down cake makes a fun center piece for afternoon tea or morning coffee. Enjoy!

Serves: 8-10 Preparation time: 15m Cooking time: 40m Ready in: 55m

Ingredients
230 gr soft flour
50 gr confectioners’ sugar
7 gr baking powder
280 gr sugar
80 gr butter, melted
4 eggs
1 orange, zested
150 gr apples, in cubes
2 apples, in round slices
120ml double cream
25ml cognac
a pinch of salt

Method
Step 1
Preheat the oven at 170C. Sift confectioners’ sugar in a 26-28cm round springform tin and arrange apple slices on bottom.

Step 2
Beat the butter and eggs together until creamy. Add double cream and cognac and beat to a soft consistency.

Step 3
Add flour and baking powder in batches, orange zest and salt and beat again to a soft consistency.

Step 4
Stir in melted butter and apple cubes, spoon into the tin on top of the apples and smooth it out so it is level. Bake for 40-45 minutes.

Step 5
Leave to stand for 5 minutes, then turn out onto a serving plate. Serve warm with a scoop of ice cream or a dollop of whipped cream if you fancy.
